  • 2 pieces fatback bacon
  • 2 pieces fresh pig tail

Method

Fry the fatback and set aside. Place the pig tail and neck bone in a medium pot, half filled with warm water, and boil 20 to 30 minutes. While the meat boils, snap and wash the beans, then wash and cut the potatoes. Add the beans to the pot and cook 20 minutes; then add the potatoes, fatback, and (if needed) a cup or so of hot water.
