  • 4–5 medium croaker or similar fish, scaled and cleaned

Fry the bacon in a skillet until crisp. Remove the bacon but leave the grease in the skillet. Sprinkle salt and pepper over and inside the croaker, then add them to the hot grease in the skillet. Fry over medium-high heat 2 to 4 minutes, until lightly browned on one side. Add the bacon, onion, bell pepper, and water to the skillet. Cover and simmer 15 to 20 minutes, until the fish is tender.
