Many Hakka dishes call for this common preserved vegetable. Although it’s readily available in Asian markets, it’s easy to make if you can find fresh broad-stemmed mustard greens. Although the pickle is customarily made from mustard green stems, Natalie Com Liu from Peru includes some of the leaves as well. Her homemade salted mustard greens maintain more crunch and texture than purchased greens and are less salty.
