Fast food made well. This is one of the quickest meals in this book, and it’s filling, comforting and everything else you want out of a bowl of pasta. Pasta is a staple food in our house and this dish will not disappoint.

Ingredients

  • 200 g (7 oz) good-quality gluten-free pasta or your preference – such as spelt or wholegrain (I use spaghetti for this dish)

Cook the pasta following the packet instructions.

While the pasta is cooking, cut the courgette into ribbons, either with a slicer or just roughly grate it, then set aside.

Drain the cooked pasta, reserving a tiny bit of the cooking water, then return the pasta to the saucepan.
