Another great one-pot meal. I love eating chunky vegetable soups, I so prefer them to the blitzed, smooth versions. This is a feel-good classic with an option to add in lots of fresh herbs at the end. I love this soup with dill and chopped parsley, but it is not always to everyone’s liking, so serve the herbs separately for people to scatter over if they like.
