Curry is such a great dish because you can include many different types of veggies and spices, which all marry together. This recipe makes a pretty big batch of curry paste but it will last you for weeks stored in the fridge – you only need to add 1–2 tablespoons to veggies for a super-quick curry.


For the curry paste

  • 3 shallots
  • 10 garlic cloves, peeled
  • 2 red chillies, or just


Curry paste

Start by making the curry paste by adding all of the ingredients to a blender and blitzing to a paste. Store in a glass container in the fridge. The longer this sits in the fridge, the more fragrant the paste.
