The trustworthy lentil – filling, easy to cook and a great addition to any meal. I love this dish as a side to the curry feast or as a dip with some home-made bread (Rosemary & Garlic Focaccia), particularly the Chickpea Flatbread or with corn nachos.
Cook the red lentils following the packet instructions. Drain, then set aside.
Heat the olive oil in a large pan and fry the shallot until nice and soft and translucent. Add the tomato purée, sumac and sweet paprika and give it a good stir.
Add the lentils, dates and coconut milk and lower the heat to a gentle simmer.
