This is a fantastic store-cupboard essential and is used throughout this book. It is easy and cheap to make, lasts a long time and tastes better than anything you will buy in a store.

Ingredients

  • 240 g ( oz / cups) raw almonds
  • 160

Method

Place the almonds in a food processor and blitz until you get a fine powder, then continue for about another 5 minutes.

Add the rest of the ingredients and blend until you have a lovely smooth butter.

Store in a clean glass jar outside the fridge. If you decide to keep it in the fridge, bear in mind that it will solidify.
