My daughter’s favourite chocolate mousse. A lovely alternative to dairy that I developed for my clients with intolerances. It is tasty and light and hopefully fills that chocolate craving that we all get. This is also a great way of not wasting chickpea water!

Ingredients

  • 80 g (3 oz / ½ cup) cashews

Method

Soak the cashews for at least 2 hours or quick-soak them in boiling water for 20 minutes.

In a bowl, whisk the chickpea water until it becomes white and fluffy, just like beaten egg whites. Set aside or in the fridge.
