Banana ketchup is a popular condiment in the Philippines. It was invented during World War II in response to a shortage of tomatoes and has been enjoyed ever since. It’s quite different from tomato ketchup, and it’s easy to make at home.

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • ¼ large white onion, finely chopped
  • ½ garlic clove

Method

  1. In a heavy-bottomed pot, warm olive oil over medium-low heat. Add onions and garlic. Cover and cook for 20 minutes.
  2. Add bananas, vinegar, sugar, cinnamon, allspice, and cayenne. Stir until evenly combined. Bring to a simmer, reduce heat to low, and cook for 20 minutes, stirring occasionally.
  3. Transfer mixture to the bowl of a food processor and process
