Nam chim in Thai simply means “dipping sauce,” and it’s a widely used condiment with nearly inlnite variations, all with subtle nuances that can change the direction of a dish. This version is spicy and perfect on a haute dog.

Ingredients

  • 5 jalapeños, finely chopped
  • 1 clove garlic, finely chopped
  • 1 tablespoon freshly grated ginger</

Method

Place jalapeños, garlic, ginger, coriander, and sugar in the bowl of a food processor. Process until smooth. Add ¾sh sauce and lime juice. Process until thoroughly combined. Store in an airtight container in the fridge for up to a few days.
