A mountain of shaved ice, drenched in different coloured syrups and sometimes gula melaka. Many of us like to dig beneath the ‘mountain’ for various ‘treasures’, including sweet red beans, agar-agar cubes and the prized atap seeds. To give this childhood favourite more texture, we’ve topped it with crushed peanuts.

Ingredients

  • 150 g (5⅓ oz) red beans
  • 100 g (

Method

  1. Add red beans, sugar and water to a pot. Boil over medium heat for about 2 hours until beans are soft. Drain and set aside.
  2. Prepare syrup. Add sugar and 100 ml (3½ fl oz) water to a pot. Boil over medium heat until syrup thickens.
  3. Pour syrup into 2 bowls. Add red food colouring to one bowl and green food colouring to the other. Set aside to cool.
