Ingredients: 1 can creamed corn, 400 g (14⅓ oz); Water, as needed; 15 atap seeds (palm seeds); 100 g (3½ oz) sugar; 50 g (1¾ oz) peanut powder; 150 g (5⅓ oz) red beans; 50 ml (1¾ fl oz) evaporated milk; 435 ml (14 fl oz / 1¾ cups) water; Ice cubes; 250 g (9 oz) cendol jelly; 50 g (1¾ oz) brown sugar; A little red food colouring; 250 g (9 oz) glass jelly, cut into cubes; A little green food colouring

A mountain of shaved ice, drenched in different coloured syrups and sometimes gula melaka. Many of us like to dig beneath the ‘mountain’ for various ‘treasures’, including sweet red beans, agar-agar cubes and the prized atap seeds. To give this childhood favourite more texture, we’ve topped it with crushed peanuts.

150 g (5⅓ oz) red beans

Method

Add red beans, sugar and water to a pot. Boil over medium heat for about 2 hours until beans are soft. Drain and set aside.
Prepare syrup. Add sugar and 100 ml (3½ fl oz) water to a pot. Boil over medium heat until syrup thickens.
Pour syrup into 2 bowls. Add red food colouring to one bowl and green food colouring to the other. Set aside to cool.
