These tortillas, made with whole wheat flour and olive oil, are healthier than traditional flour tortillas made with all refined flour and shortening or lard. They make excellent breakfast tacos and quesadillas and can be filled with a variety of fillings. They are especially wonderful for Quesadillas de Chile. If you don’t plan to cook them right away, it’s best to roll out all of the tortillas at the same time and save them in between layers of wax paper
