Konda kavum are little deep-fried oil cakes made from rice flour, treacle and spices. Creating a well-shaped konda kavum requires considerable practice and even Thiloma had to call in the local konda kavum expert to show me the technique. The cakes should have a knot on the top, which emulates the hair bun (konda) of the native women. I only managed to produce a few that were the right shape, but they all tasted delicious even if they were a bit misshapen.
