This dish is known as thalana batu, named after the main ingredient in the curry, the slightly bitter, small, white-green eggplants. I first came across them at the Siyambalanduwa markets. Intrigued, I took some back to Manike and asked how to prepare them. It was a little fiddly to remove their seeds, but lots of fun bashing the eggplants to split them open.
