Method

Bring a large pot of salted water to a boil. Add the garlic and let simmer for 1 minute. Add kale then bring the water back to a boil, stirring until the kale softens, about 2 minutes.

Drain the kale and garlic and immediately plunge into cold water to stop the cooking and preserve the kale’s green color. Drain again when cool. Remove the garlic, peel, and set aside. Squeeze the kale wi
