  • 2 tablespoons chili-garlic sauce, or to taste
  • cup (45 g) chopped shallots

Method

In a blender, combine the chili-garlic sauce, shallots, macadamias, ginger, coriander, shrimp paste, lime juice and zest, sugar, canola oil, and sesame oil and process for a minute or two or until very smooth. Pour into a small saucepan and cook over medium heat, stirring constantly until fragrant, 4 to 5 minutes. Stir in the coconut milk and cook 2 to 3 minutes more. Let cool. To store, cover
