  • ¼ cup (60 ml) seasoned rice vinegar
  • ¼ cup (60

Method

In a small nonreactive bowl, combine the vinegars, shallot, jalapeño, cilantro, and lime juice and stir until combined. Serve at once. If making ahead, mix dry ingredients and refrigerate for up to 3 days. Stir in the vinegars and lime juice just before serving.
