Jarred and refrigerated shucked raw oysters are widely available and both cheaper and easier to use than shucking your own. The downside is that they can vary widely in size. You’ll get big ones and little ones in the same jar. Cut them, if necessary, into similarly sized bite-size pieces for this recipe.
