If you’re from the Northeast, you know about clam shacks. Being from the West Coast, it took me a while to discover the delicious fare in these often-ramshackle places. My intro to clam-shack cooking was, of all places, Howard Johnson’s, a former chain of restaurants whose heyday was in the 1960s. They served fried Ipswich clams, which I couldn’t get enough of. The following recipe is close to the Hojo version.
