Both Spain and Portugal have many delicious recipes for shellfish with a green sauce. Cilantro-poblano sauce, or mojo de cilantro, with its bread crumb topping, illustrates the bright simplicity of southern Mediterranean cuisine. Try it, too, with grilled fish and chicken as well as spooned over sliced fresh mozzarella or goat cheese. Any leftover bread crumbs are delicious sprinkled over pasta.
