In this variation of the tempura recipe, the prepped squid is fried in tempura batter just like the shrimp and then dipped in a salt and pepper mix using Sichuan peppercorns (also spelled Szechuan). The unique characteristic of Sichuan pepper is that it gives you a numbing sensation in the mouth and tongue.
