Though squid recipes generally use quick-cooking techniques like grilling, sautéing, and frying, braised squid is one of the most delicious ways to prepare them. Here, a half hour of simmering them with tomatoes and wine yields tender squid to serve over fregola. Often referred to as Sardinian couscous, fregola is couscous’s tastier cousin. Both are made from semolina mixed with water, formed into pellets, and dried. But couscous pellets are light and fine, whereas fregola is coarser and ro
