These easy-to-make pancakes are great on their own, but even better when squid is included. Shrimp would be another popular choice. Doenjang is a Korean fermented soybean paste and adds an umami kick, while gochugaru, a bright red Korean chile powder, adds flavorful spice. Both are available in well-stocked markets.

Dipping Sauce

Method

To make the dipping sauce, in a small bowl, combine the soy sauce, vinegar, gochugaru, sesame oil, ginger, sugar, and sesame seeds. Taste and adjust the seasoning.
