This traditional Spanish cold soup is made sumptuous with the addition of shrimp. Note that the base mixture needs to be refrigerated for at least 2 hours or up to 24 hours for the rich flavors to marry and develop. Other cooked fish or shellfish may be substituted for the shrimp or crab.

In a food processor or blender, combine the garlic, bread, vinegar, oil, and cumin seeds and blend until smooth. Add the tomato juice, stock, tomatoes, red onion, cucumber, bell pepper, celery, serrano chile, basil, mint, cilantro, lemon juice, and chipotle. Blend to your preferred consistency, adding more tomato juice and stock as needed. Taste and adjust the seasoning with salt, black pepper,
