This beautifully green soup can be served either hot or cold, but I especially like to serve it cold in summer. It’s a wonderfully versatile soup, as broccoli or asparagus can be substituted for some or all of the peas, watercress or spinach for some or all of the romaine, and basil or tarragon for some or all of the mint.
