Crispy sauteéd soft-shell crabs, fresh rolls, and spicy mayonnaise are a combination of flavors and textures that celebrate summer.
To make the chipotle mayonnaise, in a blender, combine the chipotle, egg, garlic, cilantro, sugar, and lemon juice and blend until smooth. With the machine running, gradually add the olive oil in a thin stream until emulsified. Season to taste with salt. Thin with water if necessary. Cover and refrigerate for up to 5 days.
