Tilapias have a mild, slightly sweet flavor which makes them a blank canvas for cooking and saucing. This “blank canvas” quality and moderate price makes them very attractive. They are farmed throughout the world and feed on algae and other aquatic plants. In this recipe, they are quickly grilled, then served with a warm sabayon flavored with fresh tarragon.
