Adapted from a recipe by Barton Seaver, noted chef and educator who helped to create an online course called Seafood Literacy, this recipe teaches not only how to cook seafood but also how to maintain its sustainability. “En saor” is an Italian method for preserving oily fish with a sweet and sour vinaigrette not unlike escabeche. In Venice, it’s a popular appetizer typically made with sardines.
