This simple but elegant toast is something you might find on a Scandinavian smorgasbord. It’s also nice as a passed hors d’oeuvre. Smoked salmon can substitute for caviar.

Ingredients

  • ½ cup (120 ml) crème fraîche
  • 2 tablespoons diagonally sliced green onion

Method

In a small bowl, combine the crème fraîche and green onion and season to taste with salt and pepper. Stir until smooth and spreadable. Chop the eggs and set aside.

Toast the bread until light golden brown, then butter one side of each slice. Spread the buttered side of each slice of toast with crème fraîche, then top with an even layer of chopped egg. Evenly dot the caviar on top of the
