Salmon or trout roe is flavorful, colorful, and much more affordable than sturgeon caviar. It adds a delicate crunch to this luxurious pasta dish.

Method

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until al dente, or according to the package directions. Drain, reserving ½ cup (120 ml) of the pasta water.

While
