Don’t be put off by the idea of using “raw” salt cod in a salad. It’s a tradition in Spain and other parts of the Mediterranean. This dish is called remojon in Spanish. The salt cod isn’t really raw, since it’s been thoroughly salted and dried. Once it’s been soaked and desalted it is used as is, without further cooking, for this unusual and interesting first-course salad. This recipe is adapted from Nancy Harmon Jenkins, who is an important authority on Mediterranean cooking.
