Uni has a rich “taste of the sea” flavor. It goes best with something that mellows the flavor a bit, like pasta or rice. Serving it with an easily made horseradish cream is another favorite. This is a recipe with Nordic roots, and it’s unique because it is served in the sea urchin shells.
In a deep bowl and using a whisk, beat the crème fraîche and heavy cream together until thickened but not yet in soft peaks. Fold in 2 teaspoons of horseradish, 1 teaspoon of lemon juice, the soy sauce, and salt and pepper to taste. If desired, stir in 1 or 2 more teaspoons of horseradish and/or 1 more teaspoon of lemon juice. Add salt and pepper to taste. Cover and refrigerate for at least 1 h
