Make this jam with honeydew melon, cantaloupe, or galia—it’s your choice (but don’t use watermelon, which contains too much water). Tarragon is a nice addition (as you probably know by now, I like little surprises). And don’t restrict this jam to toast; add a dollop to yogurt or a bowl of quark, or spoon it onto pancakes.
