This starter became a big hit in our restaurant last summer. It’s an idea from Sophie, who has been cooking with us for years. We found it so simple and so delicious that we wanted to give you her recipe.

Ingredients

  • 4 artichokes, stems cut off

Method

Bring a large stockpot of salted water to a boil. Add the artichokes and boil for 45 minutes. Drain the artichokes and rinse them under cold water. Let them drain upside down in a colander.

With a sharp knife, remove the inner leaves and the hairy chokes. If you like, you can trim the pointy tops of the artichoke leaves with some scissors. It’s a little more work, but makes it so much e
