Of course, instead of goat’s milk brie you may use regular brie, or goat cheese. Even blue cheese! Any of those would be good here.

  • 1 (750-ml) bottle of red wine

Method

In a large saucepan over very low heat, combine the red wine, sugar, cloves, star anise, cardamom, and cinnamon sticks. Add the pears and poach them until they are soft but still hold their shape. Take them out of the syrup with a slotted spoon and let them cool.

Continue to boil the cooking liquid until it’s reduced by half.
