Make sure that all ingredients are at room temperature
In a bowl, beat the egg yolks together with the mustard, and add some salt and pepper. Add the oil in a thin trickle, while mixing with a hand mixer. Once you’ve added half of the oil, season the mayonnaise with vinegar and lemon juice. Once the mayonnaise begins to thicken, you can add the oil more quickly.
Season with salt and pepper. Keep cold in the refrigerator until use.
