Home Made Mayonnaise

Make sure that all ingredients are at room temperature


  • 2 egg yolks
  • 1 teaspoon sharp (Dijon) mustard
  • Sea salt and freshly ground black pepper
  • About cups (300 ml) sunflower oil
  • 2 tablespoons white wine vinegar
  • 1 to 2 tablespoons fresh lemon juice (to taste)


I advise using this mayo for the Russian potato salad and the smoked chicken salad, but a basic recipe for mayo can always come in handy.

In a bowl, beat the egg yolks together with the mustard, and add some salt and pepper. Add the oil in a thin trickle, while mixing with a hand mixer. Once you’ve added half of the oil, season the mayonnaise with vinegar and lemon juice. Once the mayonnaise begins to thicken, you can add the oil more quickly.

Season with salt and pepper. Keep cold in the refrigerator until use.
