We love this hearty recipe for when you have company but want a casual meal. Once you make the tomatillo sauce—which can be stored in the fridge for a week—it couldn’t be easier to throw together. Crema, which is the more classic accompaniment, can be used in place of the Greek yogurt.


For the Tomatillo Sauce

  • 2 lb (1 kg) tomatillos, husks and stems removed


To make the tomatillo sauce, line a baking sheet with parchment paper. Preheat the oven to broil. Rinse the sticky residue from the tomatillos, then dry and quarter them. Stem, halve lengthwise, and seed the serrano (if using) and poblano chiles. Arrange the tomatillos, chiles, and garlic on the pan, spacing them out evenly. Broil the vegetables until blistered and tender, about 12 minutes. Rem
