We love this hearty recipe for when you have company but want a casual meal. Once you make the tomatillo sauce—which can be stored in the fridge for a week—it couldn’t be easier to throw together. Crema, which is the more classic accompaniment, can be used in place of the Greek yogurt.
To make the tomatillo sauce, line a baking sheet with parchment paper. Preheat the oven to broil. Rinse the sticky residue from the tomatillos, then dry and quarter them.
