Chicken pot pie is an American classic, and to us, a nostalgic representation of the ultimate comfort food. Traditionally, it is composed of a filling of chicken, celery, carrot, and onion baked in butter-based pie pastry. In our modern version, we add mushrooms and thyme and bake the filling topped with layers of flaky phyllo dough for added savor and sophistication. Serve accompanied by a lightly dressed chicory salad and a good Sauvignon Blanc.
