Method

The Catalan Way: for 4 people have 1 kg ( lb) squid, also soda water, flour, olive oil.

Clean the squid in a bowl of water. Pull out the heads with their crown of tentacles, and discard what is thus drawn from the ‘bag’ (body) by severing at the neck. Fish out the rest of the contents of each ‘bag’, the ink sacs and the transparent cartilage. Then peel off the fíne purplish outer skin which covers them. Pinch out the eyes and ‘beak’ from the heads. Throw away the water and rinse the cleaned squid. Then cut the bags into rings and the head and the tentacles into pieces. Moisten them with a jet from the soda siphon. Shake in a cloth in flour and throw them into very hot olive oil in a frying pan and cook till golden, 6 or 7 minutes. Drain and serve with lemon slices.
