This is useful and cost-effective party food – make it when you have a crowd coming, and hold some back for post-party nosh. Fresh sardines give you that saline sea-flavoured hit normally associated with more upmarket foodstuffs like oysters or caviar. Cured like it is here, this cheap ingredient is better than both, I think, and makes for a truly luxurious eat.
