  • 350–400 g sirloin steak (a personal favourite; you can use other cuts if you prefer)

Method

Purée the marinade ingredients together in a food processor to make a paste, then rub it all over the steaks. Cover and place in the fridge. Allow the meat to rest in the marinade for a minimum of 1 hour and up to 48 hours, but beware – the meat will soften more and more, so no longer or it will become mushy.
