For the Sauce

  • 2 oranges
  • 2 shallots, peeled, finely sliced
  • 1 tbsp white wine vi

To make the sauce

Squeeze the juice from 1 orange, place into a saucepan over a medium heat and bring to a simmer, reduce by half. Grate the zest of the second orange onto a plate and set aside, then peel the orange and segment it, chop the segments and set aside.
