  • 1 x 8 kg-9 kg (17 lb-20 lb) whole smoked leg ham</

Method

  1. Prepare your ham for glazing by first removing the outer rind. Use a sharp knife to cut around the shank of the ham, about 10 cm (4 in) from the end. Run the knife around the rind and underneath the skin, then remove it in one piece by running your fingers between the rind and the fat.
