Whenever you make soft polenta it’s inevitable that you’ll make more than you’ll need, so spread the leftovers into a shallow tray lined with plastic wrap and refrigerate. The next day, cut the polenta in equal-sized pieces and turn them into a stunning breakfast. Adjust the quantities of the recipe to suit however much polenta you have.
