In recent years Cajun cooking has taken the world by storm with its lively mixture of spices. An American original, Cajun (the shortened form of Acadian) cuisine was born on the Bayou. The Cajun community originated in France (they still speak a patois) and arrived in Louisiana via Nova Scotia. The food reflects their French heritage, primarily in their love of the pleasures of the table and in the names of some of their dishes. It also reflects the Spanish/Mexican influence and African/Car
