This vinaigrette incorporates the citrus flavours of lemon and lime with the kick of chilli. It is a lively addition to tossed greens when a Latin American flavour is desired. Try it on cos lettuce topped with goat-cheese-stuffed peppers, or on a warm chicken or taco-y salad, with bits of crispy corn chips or tortillas, a handful of coriander, nuggets of corn and strips of sweet pepper.
