A Mexican pickle of onions and chillies, its slightly picante crunch is a delicious accent served atop rich black bean tostadas, or wrapped up in a soft tortilla oozing melted cheese. This is the traditional Yucatecan accompaniment to pit-roasted, banana-leaf-wrapped pork, or to any meat or fish that has been coated with a Recado Rojo and baked or grilled to savoury tenderness.
