Pico de Gallo translates literally as ‘beak of the rooster’, though no one is quite sure why it is called this. Perhaps it is because all of the vegetables are cut into the size of corn and other foods that chickens peck at with their beaks. In Texas, California and parts of Mexico Pico de Gallo describes this chunky relish which accompanies Fajitas; in other regions of Mexico the name can refer to a salad of crunchy jícama and sometimes orange chunks.
