The native Carib Indians were preparing hot relishes and sauces long before the New World was ‘discovered’. This combination of sweet mango, hot chilli and tart lime is delicious with duck or roast pork; spoon some into the defatted duck or pork drippings after you’ve deglazed the pan. It’s good, too, with curried dishes or grilled seafood.
